The cake got SO high after two whip cream-strawberry-whip cream layers, I had to make a double batch of frosting! (single batch FYI: 1/2 cup butter, 8 oz cream cheese, 1 tsp vanilla, 1 lb powdered sugar).

You know, I had no idea frosting was so simple to make. After reading this post, then looking through the ingredients list of prepared frosting at the store, I was inspired to make my own buttercream frosting for Donovan’s birthday cake. Success! I may never buy store-bought icing again… ; )
Yeah, Marcy! One thing I forgot to mention above is that you should sift the powdered sugar for the frosting BEFORE adding it to the mixer. I neglected to do so and had to employ my Photoshop skills to edit out a few little white lumps that appeared in my hot pink frosting. BTW, I am looking for a good chocolate frosting recipe if anyone has one… emergency cake request for tomorrow and I am on it!
