When our garden starts to overflow with tomatoes, our boys know they are
in for days and days of their favorite snack… pink bread! This appetizer
gets its name from the appearance of the bread after you rub a cut tomato
across it. It liteally turns pink! My parents learned about it during a
trip to Spain almost fifteen years ago and we’ve been enjoying it ever
since. In Spain or Italy, you’ll find many variations of this healthy,
delicious snack, sometimes made with grilled bread and garlic, sometimes
topped with anchovies, etc.

To make pink bread, you need a few basic ingredients: really ripe tomatoes
(fresh from the garden), ciabatta or other crusty white bread, extra
virgin olive oil (your very best), and sea salt (I am partial to Maldon
Sea Salt these days). To make pink bread, cut several slices of bread and
set them on a plate. Rub cut halves of the tomatoes all over the bread,
smashing in the juice and bits of tomato. Drizzle with olive oil and crush
the sea salt all over. Enjoy!
