healthy, delicious and easy? yes!

Just made this wonderfully tasty version of Chipotle’s lime-cilantro rice for lunch today. I made it more healthful by substituting a tasty medium-grain brown rice and bumping up the lime quotient a bit. Our Bearss lime tree is going crazy this month and I needed to find things to do with all the limes we’re picking.

2 cups organic medium-grain brown rice
4.5 cups water
1 tsp olive oil
juice of 2-3 limes
handful of finely chopped, fresh cilantro
a few good shakes of salt

Combine rice, water and olive oil in a medium-size saucepan. Bring to a boil, then cover and simmer about 50 minutes (or whatever the rice directions say for cooking to a firm bite). In a large bowl, add the rice, lime juice (I used 3 and really liked the strong lime flavor), chopped cilantro and salt. Stir well and enjoy!
