orange theme cont’d (sweet potato w/chevre)
Here is yesterday’s fast and easy lunch for your consideration.
A few days ago, I baked 7-8 sweet potatoes so I would have something on hand during this relatively busy work week (just finished a 5-page website for an Etsy friend, Kerrie, http://woodenhive.com/ and am working on two pro bono events: a “Conversations with Great Teachers” parent ed night at the middle school and a benefit for the Youth Theater Program at Broadway by the Bay for my friend, Erica).
And I’m trying not to neglect my cherished long-time clients at the same time! So I needed something that would take about 2 minutes to prepare.
For a really tasty snack or lunch (add a salad, etc.), take one pre-baked sweet potato and break it open with a knife or your fingers. Microwave for about 2 minutes on high then stuff two 1/4″ slices of herbed chevre in the middle. Top with a few snips of fresh herbs (I used tarragon and thyme) and a bit of salt and pepper. Voila!
I think this blows sour cream out of the water and is a great alternative for those (like me) who can’t tolerate large doses of cow’s milk any more.
