As our summer weather draws to a close, we are savoring the last of our garden’s tomatoes. This dish is actually best in hot weather since it’s nice and cool – in many ways, it reminds me of summer. However, if you have an abundance of leftover tomatoes and are running out of ways to serve them, now is the perfect time for a little salad switch-up.
Slice tomatoes, avocado and sweet onion (Maui, Vidalia, etc.) then drizzle with a simple dressing of half olive oil, half fresh lemon juice, salt, pepper, and a generous pinch of dried oregano. The oregano is a nice contrast to the avocado and onion (versus other herbs). Enjoy!
